The term “the new normal” was one that was commonly used in the industry back in 2020 to describe the supply chain chaos brought on by pandemics. Many manufacturers patiently awaited the end of that new standard and the return of the pre-2020 model in its proper position.

However, it looks that by 2022, the previous state of affairs for food processing and logistics, as well as for ingredients, suppliers, labor, and other factors, may be long gone. It has been replaced by a reality that is always changing and includes all the elements required to construct and run food production facilities, yet they are rarely synchronized with one another.

Day-by-day changes have made the situation tougher. Now that we are in the final quarter of 2022, it is obvious what the food industry’s biggest challenges are, and things may not improve as quickly as we think. So, here are 3 big challenges that the food processing industry is facing in 2022.

Longer deliveries of equipment

The most common challenge is a longer period of waiting for equipment and its parts. This is the challenge we face most often, working with our clients. When ordering a solution for a food processing factory, clients expect delivery in 2 to 3 months. But the sad reality is for now the delivery of large machinery takes 4 to 6 months. Why is that? 

The main reason is supply chain issues. Driver shortages, logistics provider capacity issues, inflation, shipping delays, increased freight costs, depleted inventory levels, labor shortages, and the list goes on. It all started with the pandemic and another hit was the unstable political situation in Europe. So, the supply chain management is not recovered yet and the problems are still impacting delivery processes. Sadly, there is one big hit that will affect the supply chains negatively – Global Energy Crisis.

Inflation and cost per product

The latest data show that inflation is now having an effect on all areas of the industry. Comparatively, the total cost per product grew from about 11% to 15%.  And not only manufacturing side is getting more and more expensive as the cost of ingredients and materials are rising.

Also, inflation will have an impact on the amount of consumer spending and sales. The year will see relatively high price rises as producers move on to customers’ higher input prices. A decrease in overall consumer spending may result from the fact that average hourly earnings are no longer keeping up with inflation on the demand side of the economy. The most accurate measure of the inflation problems of today is the material cost per product in 2022. The cost of materials per product grew by 11% last year. That percentage is 17% this year.

Increase in demand for healthy and immunity-boosting foods

Many people concentrated on their health and diet throughout most of 2020. Numerous studies show that the pandemic increased people’s interest in nutritious diets that strengthen immunity. According to experts, the trend is likely to last through 2023. As a result, a lot of businesses have embraced the immunity trend and are participating in it. According to research, companies will probably make immune-supporting elements their main focus in 2023. Additionally, they want to add health-focused benefits and claims to their products.

Sales of products that boost immunity have already increased, and manufacturers are expanding their product lines to include such ingredients. The tendency is expected to persist into the following year, even though the majority of the population may have received vaccinations this year. A study found that 60% of customers are increasingly looking for items to improve their immunity, with 33% saying their concerns have grown in the year 2020. Immunity is therefore anticipated to be a major theme all year long. So, it’s the last minute to look over the products and ingredients you are offering. Will they be competitively in a market seeking healthy and sustainable food?

The question is - Will consumers return to pre-pandemic behaviors? Or this is the “new normal’’?

Consumers are quickly returning to vacations, travel, and eating at restaurants and entertainment venues rather than at home as the world recovers from the pandemic. Why Weigh?

Weighing is an essential part of the food production process, and applications can be found across every food processing plant, regardless of industry. Weighing happens early in the production process, such as when incoming products arrive at the receiving dock or weighing and labeling finished goods boxes as they move into inventory.

Another crucial role played by weighing instruments happens during the construction of product recipes, where ingredients must be dosed with extreme accuracy to ensure products taste the same in every batch.

Undoubtedly, weighing is crucial in determining the quantity and quality of the products producers deliver to their customers. Scales for the Food Processing Industry

Alright, as we found out, food processing is not possible without weight grading, that’s for sure. But you might have a question — what kind of scales exist in the food processing industry? Let’s clear things up and look at the most common variations typically used: 

  • Floor Scales can be found in multiple areas of a food processing plant, most commonly on receiving docks to weigh incoming pallets of products. The main task for this kind of scale is to ensure what has been received matches what was ordered. Floor scales are also found in the production areas of the plant. Processors use the scales to weigh larger products like combos, steel bins, and trollies.
  • Bench Scales are the ideal method of weighing for food production due to their high readability and lower capacity. In other words, they can be highly precise and able to weigh small individual food items with a high degree of accuracy. 
  • Counting Scales allow for the efficient weighing of a high volume of identical parts. This can be very useful when the same ingredient is used repeatedly in a batch, and ensures the final product is consistent and of high quality.
  • Checkweighers or check weighing scales are useful weighing features that enhance efficiency in packaging and sorting procedures. They allow users to select a weight range and, in turn, accept or reject a product based on whether or not its weight falls within a predetermined range.

Weighing scales used in food processing

It’s no secret that ingredients pass through numerous quality control steps during food processing. And as we discussed before — accurately weighing ingredients is essential for maintaining product consistency. But there is one setback — most of the scales used in this stage of food production have high readability but lower capacity. So, remember that check weighing can be a valuable feature to have, especially when products are on their way to being sorted and packed. And to control the manufacturing even more, there are other useful features that include parts counting and batching.

Weight grading used in shipping and storage

The last step in the manufacturing process involves packing, shipping, and storing products. In this stage, heavy-duty platform scales provide the necessary capacity to measure products in crates, boxes, and pallets. To be honest, it’s also more convenient to weigh large quantities of packed products using a floor or platform scale together with indicators for more accuracy. We believe that the strength and success of PERUZA are in the hands of our team. So, we decided to celebrate those who work hard and represent our company. And what’s a better way than by telling you more about our team members. Let’s start with our most experienced team member, regional sales manager – Ivis Bebrišs. As his colleagues claim – his most noticeable personality trait is humor. Even in this conversation, the serious stories of his life mix with a joyful attitude toward life.

Let’s start from the beginning, tell us more about yourself – where are you from and where did you spend your childhood?

I come from Talsi and I’m genuinely proud to be from Kurzeme. When I was two, my family moved to Dundaga, where I spent most of my childhood and school years. Dundaga definitely has left some impact on my personality – it is a wonderful and romantic place, with its castle and park, with water and small islands. And beautiful girls, of course. All of it made me the romantic person, that I am to this day. I spent my school years in Dundaga. There I met my friends, that actually play a big part in my career choices.

What about your education? How did you choose your profession?

After high school, when I had to choose where to study, I thought that I wanted to wear a white coat for my work, just like a doctor. But in that time (the 1970s) there were only two industries that had that kind of uniform  – medicine and the food industry. 

My friends from high school, who were older, had chosen Latvia University of Life Sciences and Technologies or at that time – the Academy of Agriculture in Jelgava. They were studying catering industries, which meant everything about restaurants and pubs. And again about seeking the romance of life, the catering industry seemed surrounded by romance. I can say, the 1970s were the golden times for restaurants and cafes, for sure. But the final decision I made was because of my friends from volleyball, which I met in high school. They worked at fisherman’s kolkhoz ‘Banga’ at Roja and invited me to work with them. So, my choice was made – I applied for the program Food Technology. And the rest is history, as you can say.

Where did your path lead after university?

I graduated in the summer of 1980th and in November I was already starting my job at the sea. I worked on a ship in the Baltic sea. Fishing vessels brought us the catch of the day and we processed it on our ship. And it was a really interesting and unique experience – as I started to work right after university, I didn’t have any experience before, so a lot of fish that were caught were unknown to me at the time. They didn’t teach about that at the university. But to be fair, my colleagues didn’t recognize them either. After all these years,  looking back on all the experience, working on a ship or in different companies, the main takeaway is people – all the contacts and friends even though I got working in the same field for more than 40 years.

Tell us more about how you got to PERUZA?

Before I started to work at PERUZA, I was working in Liepāja. My position was production manager and I had about 300 employees under my supervision. As you can imagine – it was a stressful and tense time in my career.  I just sat in my office and thought about how I wanted to change something in my life. So, PERUZA came to my mind. At the time, in the year 2011, PERUZA was a well-known and growing company. I presented myself as an experienced specialist in technologies, especially fish processing. And after 2 months I moved from Liepāja to Rīga and started my job as a regional sales manager. Of course, you cannot even compare the company in 2011 and now, how it’s grown and developed. And I’m genuinely proud to experience and be part of that.

So, tell us more about your typical work day.

There are no two days that are alike, that I can assure you. Every day is different because every client is different. But one thing stays the same – every morning starts with a cup of coffee. After that, everything revolves around communicating with clients. Sometimes calls, sometimes e-mails. But I usually stick with the strategy not to start a lot of tasks at the same time, but to finish them one by one before starting a new one. 

And after work? What are your hobbies?

I am a big fan of fitness and an active member of ‘My fitness’ for many years. I go at least 3 times a week to the gym. That’s not easy, to be honest. Sometimes it’s hard to get the motivation.  But when I go, afterward I feel proud of myself. It’s like a small victory for myself. Also, I like to ride my bicycle. I don’t like to ride in the woods or off trails, so, I choose the Biķernieku track. There I have a great company and the distance is quite ok, something around 25-30 km. But in winter, asides from fitness, of course, I am a big football fan. I enjoy watching Premier League. My favorite team is Liverpool. And in November, when the Champion league starts, I can say – most of my winter goes by in the football atmosphere. And lately, I started to explore Netflix. It’s not only for entertainment but I’m trying to extend my knowledge of English also. As you can say – combine the pleasant with the useful.

Taking a few steps back to the work topic – tell us about the proud moments of your job.

The moment I feel most proud of my job is when the clients are satisfied with their choice and purchase. When we visit their factory, they invite us in and want to tell us how happy they are with the results with a spark in their eyes. They are the proudest moments of my job for sure. But if we talk about the small moments, that’s everyday work, being with my colleagues. Working in a company, where the average age is around 30, I feel younger myself. And that’s a great combination – my experience with young energy.

May you always have good health and joy in life! may it always be a pleasure to come to work in the morning, and a pleasure to return home in the evening! And as my favorite team’s motto says – Never Give Up!

And to be honest, it can be a challenge to keep employees engaged during the summer months, a lot of companies typically experience a dip in productivity beginning around July.

But a bit of planning ahead can save you from major stress. So we have 3 great tips for you to consider on how to manage and keep your business operational during seasonal holidays.

Plan your staff capacity

No doubt everyone needs a break during summer, that’s for sure. But managing a vacation plan can be a great headache. Especially in manufacturing, where inventory management requires very specific job skills and not everyone can fill anyone’s position. And we know finding enough well-trained, reliable staff is often difficult for manufacturers at any time, so do not rely on that option during seasonal vacation time at all. 

If your manufacturing business has limited staff capacity, you are likely to struggle. Of course, running a second or third shift may be a relatively simple way to keep up with demand in the short term. But in reality, running multiple shifts requires a lot of extra workers. And it’s not safe for staff to work multiple shifts back to back.

Any business that is affected by the holiday season should consider investing in additional staff. And do it way before the seasonal vacation rolls around. Yes, this solution may involve recruiting unskilled staff or staff from a related sector. Or maybe students that need summer jobs or internships. But remember this will demand a lot of training and some extra time to get things done.

Think about the supplies

Remember, the holiday and vacation seasons are busy for everyone. And most suppliers are under great stress as well. Some may be running out the supplies. It’s possible that a single supplier supplies many hundreds of manufacturers and many of them may be ordering greater volumes than usual in the lead-up to the holiday season. When holiday or vacation time comes closer, try to avoid very poorly performing suppliers. If your suppliers fail to meet commitments during less busy times, definitely try other suppliers. And if possible ask your suppliers about their ability to withstand supply shocks and contend with seasonal pressures. Perhaps, you should make some stock of supplies before the tight periods, if it’s possible, of course.

While we have so many bottled water choices at our grocery stores, one might think the clean water crisis is not really affecting us, as we live on a planet that is covered by nearly 70% pure water.

But out of that amount of water, only 2.5 percent is fresh, and the rest is saline and ocean-based, in other words, not good for humans to use.

What’s even more surprising is that just 1 percent of all freshwater is easily accessible, with much of it trapped in glaciers and snowfields.

So if you have clean water coming out of the tap above your sink, it doesn’t mean it’s like that everywhere, and you should consider yourself very lucky.

To put salt in the wound, the daily commercial practices of humans (such as selling a variety of bottled water in developed countries) really make everything worse. 

What causes this issue?

The main causes of the clean water crisis are global population growth, the use of water in agriculture (70% of global water usage is in agriculture), poverty, poor water management, and political instability.

Not to forget the water pollution created by unsustainable and simply bad fishing practices in the sea.

A report of 2019 found that dumped fishing gear is the biggest plastic polluter in the ocean, and the processing of fish and sea products oftentimes uses way more water and leaves a lot of waste, chemicals, and pesticides behind in favor of cheaper baseline pricing of the products.

All of this in turn contaminates the area and impacts marine life, making clean water sources that much less accessible for filtering and usage for drinking and sanitation.

With such a dire picture you might think – but what can my business do to help solve this? This is such a big problem, and I as a simple business owner or even an individual cannot do anything to change it.

1. Use water filters and reusable bottles

For individuals in any developed country, it is so simple and inviting to just buy bottled water from the grocery store to always have fresh, drinkable water at home.

But the effects it leaves on the planet are heartbreaking – plastic bottles generate more plastic waste and create a massive demand for companies to boost up the pricing of water, making the gap between accessible water and water insecurity that much bigger in developing countries and lower-income households.

You can change this around by purchasing a water filter. There are so many types of them – ones that can be added directly to your tap, or ones that can collect the water from the tap and filter it through special filters in the cup.

Purchasing a reusable water bottle made from stainless steel or glass would also help greatly to this global problem. And this is also a great way to increase and monitor your daily water intake if that’s something you’re hoping to do.

2. Conserve water while doing daily tasks

One of the easy ways to conserve water is to close the tap while soaping up your hands. Turns out that by simply closing the tap for those 20 seconds you can save 20 to 40 liters of water per day. That’s you personally saving 14’600 liters of water per year – talk about modern-day superheroes!

The same goes for closing the tap while brushing your teeth, cooking, or soaping up the dishes – any task that takes way more than 20 seconds – imagine how much water you alone can save. Not to mention, how great it is if the whole household takes on this challenge and saves the water together.

The ways to conserve water described above are so simple to do, yet have such a big impact on the clean water issue, we hope you’ll start applying them today!

3. Take showers smarter

Although habits can help save more water than hardware, it is important to mention that showerheads installed before 1992 can pump as much as 31 liters of water per minute.

If your house still has one of those oldies, take five minutes to install an inexpensive low-flow version. These emit less than 8 liters of water per minute and no, you won’t even notice the difference. 

The average shower uses about 15 liters of water; the average bath uses 190 – so even if you shower 12 times a day, you’ll save more water than if you took one bath.

And an even better way to save water is to take shorter showers, or the so-called “navy showers”, where you turn the water off each time you soap or shampoo up.

While there is no scientific proof that showering together saves a lot of water, it sure can be helpful for you and your significant other to regain trust and closeness at a new level, so feel free to try this out as well in the name of saving the planet.
